Hudson House adds PV restaurant to its 2027 Arizona plans

Hudson House is planned for PV at the former Paradise Valley Mall site at 4568 E. Cactus Road. It is the brand's second Arizona restaurant planned for 2027, along with a downtown Gilbert location at Heritage Park.

Hudson House is headed to PV, Red Development's mixed use redevelopment of the former Paradise Valley Mall property at 4568 E. Cactus Road in Phoenix. The restaurant is expected to open in 2027, the same year the brand plans to open at Heritage Park in downtown Gilbert.

The restaurant comes from Vandelay Hospitality, a Dallas based company led by restaurateur and CEO Hunter Pond. Vandelay has operated restaurant brands in Texas since 2012. Hudson House opened in 2017 as a neighborhood restaurant and raw bar, then expanded in the Dallas area and Houston.

The concept takes cues from New York's West Village and the Hudson Valley. Its menu centers on East Coast seafood and raw bar items, with oysters, shrimp cocktail, tuna tartare, lobster rolls, fish tacos, chicken parmesan, steak frites, chopped salads, and a cheeseburger among its regular offerings.

The PV site is part of a $2 billion project replacing the former mall with a walkable district that includes retail, restaurants, entertainment, office space, housing, and public gathering areas. Hudson House will add another dining option to a redevelopment that is drawing restaurants and retailers to a major northeast Phoenix property.
